Meatless Monday!!
I am making more of an effort to share some of the food that I eat/make here on the blog. We all know that our diet is a huge contributor to how we feel and perform so I want to share a little more of this part of my life with you.
A little disclaimer before I go any further is this:
I don't eat based on any diet, just eat the best that I can but am not too hard on myself. I am not a dietitian, I do not track calories or closely monitor the nutritional content of every single thing I eat.
Each week I try to have at least one meal on Monday be meatless. Does this always happen? Not by a long shot.
Today was one of those days where I am getting down on fresh produce that I have left in the fridge so I just went with it. I cut up pretty much one of everything I had, threw it on the grill and hoped for the best. For the dressing, I found a recipe online that was simple and whipped this up while the veggies were grilling.
1 Fennel bulb
1/2 Avocado
1 Orange Pepper
Romaine lettuce
I put everything but the avocado on the grill and cooked them until they were at the desired tenderness.
While the veggies were grilling, I googled a simple Mexican vinaigrette (had to something Cinco de Mayo inspired) I found this recipe here.

- 1 tablespoon of apple cider vinegar
- 1 1/2 tablespoons of honey (or other sweetener)
- 1 tablespoon of lime juice
- 1/4 teaspoon of chili powder
- 4 tablespoons of olive oil
- pinch of salt (optional)
- pinch of chipotle or cayenne pepper (optional)
I did substitute the apple cider vinegar for a regular white... wishing I had the apple cider, probably would have actually been even better. I also think I would add more more chili powder and cayenne pepper so it would take more like a taco seasoning or something with a little more sass.
After everything was ready I put my romaine lettuce on the plate, the grilled veggies next, then sliced avocado, a little cheese and drizzled the dressing on top. I was 3/4 the way through this delicious salad when I said "Aw man.. I forgot the sunflower seeds!!" So promptly dumped some on top. Made it.
